The Carbon Collective

Mod-Asian small plates, Asian-inspired cocktails and luxury watches all under one roof

The Carbon Collective is a two-storey establishment, which houses a restaurant, Muse, a cocktail bar, Amuse and a luxury watch retail space. Housed within a conservation shophouse, the space is modeled after a Swiss craftsman workshop. There are no sleek carbon and metal elements to be seen, as the name suggests, instead, expect wooden tables, grey brick facades and a herb garden wall (plants here are used at the restaurant) at the sunny staircase leading up to the second level.

The first floor is where Muse and Amuse sit. Muse's menu is updated quarterly and comprises Mod-Asian small sharing plates such as Golden Kibun, a kimchi risotto filled with panko and Korean red pepper paste mayonnaise ($15); and Tartaro, a 200-day grain fed wagyu steak tartare mixed with Korean honey pear, red chili and a raw egg yolk ($18). For a more filling meal, try the sous vide and grilled Aurora USDA Prime Black Angus Ribeye with Thai basil sauce ($78). For dessert, try the unconventional gula melaka panna cotta with umami sea urchin ($12).

Cocktails at Amuse are concocted by mixologist Isz Valentino, and are meant to accompany the dishes at Muse. For the daring, there’s the exotic Tom Yum Bloody Mary ($25) that features all the components of a tom yum broth. Less adventurous, but still appealing, are concoctions like the Teh Halia Earl Grey ($25), made using ginger cognac, Cointreau Chamomile and grapefruit juice; and the rum-forward Mango Sticky Rice ($25) that comes with a serving of glutinous rice and slices of mango.

Upstairs, you'll find the retail space as well as a private dining room and lounge. Browse through their collection of luxury watches from Grieb & Benzinger, Louis Moinet and Bernard Favre, all displayed on the bookshelves.
