With its warm lighting and dark wood furnishing, plates and saucers stacked up on any available counter space, educational posters about sushi and seasonal fish in Japan as well as Japanese prints pasted on its walls, Kan Sushi resembles the cozy hole-in-the-wall eateries one can find in Japan. There are only 22 seats inside, of which 10 are at the sushi counter. Owner and executive chef, Kan Nishina is manning the counter himself. Kan entrusts a fish specialist from Asahi Fisheries Co.Ltd, the top fish supplier at Tsukiji Fish Market, to personally select the best seasonal fish and ship it direct to the restaurant, where he parlays them into a variety of sushi and sashimi dishes for diners.
