The Best of Italy Gala Dinner

The hotel’s Grand Salon hosts five of the city’s Italian chefs including Mario Caramella (inITALY), Roberto Galetti (Garibaldi), Lino Sauro (Gattopardo), Emanuele Faggi (Gaia) and Andrea Bontempi (Grand Hyatt). Each chef will prepare a course in this five-course dinner with the likes of 63-degree egg, truffled sweet potatoes, seaweed salt and Italian caviar from Lino Sauro; Galetti’s Hokkaido scallops with white truffle infusion and artichoke puree; and Mario Caramella’s risotto of beetroot and smoked eel. The dinner, of course, features wines by The Straits Wine Company with bottles of 2011 Valpolicella Classico Superiore-Sant’Urbano and a 2010 Barbera D’Asti-Bricco Dell’uccellone.
