Started by young entrepreneurs Lambert Chen and Josh Chou, Diamond Kitchen’s one hidden gem that’s located in a very unassuming place—a condominium in Marine Parade. Chef de cuisine Kevin Lau whips up seafood and zi char signatures like Champagne pork ribs (from $12), prawn paste chicken (from $12), superior stock clam bee hoon (from $12) and gan xiang crab (market price). A small selection of desserts is also on offer, including items like yam paste (from $12) and bird’s nest ($20).
At Royal Pavilion, this grand eating spot features mains like lychee smoked duck ($35 for half) and wok fried mashed fish noodles with lobster in lao gan die sauce ($28), alongside dim sum creations like baked Swiss BBQ snow bun ($5.50), mini egg tarts ($4.20) and our ultimate favorite, a crispy shredded radish pastry roll ($4.50). If you prefer, go for their set menus (from $38) to sample a little bit of everything.
