It’s undoubtedly busy season with openings aplenty, and one we’re especially excited about is new restaurant Esquina on December 10. The latest venture in foodie enclave Chinatown by hotelier and restaurateur Loh Lik Peng will be helmed by Jason Atherton.
Some of you may know Atherton better as Gordon Ramsay’s protégé, but Atherton is a culinary force in his own right. His London restaurant Pollen Street Social was awarded its first Michelin star earlier in October this year.
We had a quick peek into the as yet unfinished Esquina last night, but we already like what we see. It’s an intimate space, and certainly befitting of the tapas bar concept.
Although Atherton only gets into Singapore next Thursday, December 8, just in time for the big launch, he’s already got his men on the ground in the form of Andrew Walsh. Remember that name, because you’ll be getting to know Walsh a whole lot better (that’s our plan anyway).
So far, possible Spanish menu items include slow-cooked egg with bravas sauce, potato and crispy jamón ibérico, scallop ceviche with radish salsa, as well as ox cheek with mash, capers and bone marrow crumbs.
Check out our interview with the man himself.
