Anti:dote’s new “Cure-All” menu could be just what you need for a mid-week pick-me-up or to help you unwind over the weekend. While the cocktails may not cure your ailments, they can certainly lift your mood with their creative interpretations of ancient and modern remedies.
Led by head mixologist Kingston Chin, the bar at Fairmont Singapore offers nine non-conventional concoctions that have been cleverly disguised as ‘cure-alls’ in three sections: Long Long Time Ago, Grandma Says and Modern Times.
Long Long Time Ago is inspired by ancient remedies from around the world. Try the Ancient Love Potion ($25) which transports guests to dynastic China with an array of historical ingredients: date-infused baijiu representing energy and fertility, rosella kombucha for digestion, and pink aromatised wine. The potion is served in a smoke-filled Chinese clay pot, symbolising an offering to ancestors for healthy relationships.
Grandma Says celebrates cures inherited through the generations. Pandan Everywhere ($25) celebrates local flavours and one of Asia’s beloved plants, pandan, known for its anti-inflammatory and antioxidant benefits. Milk tea-washed Remy Martin VSOP cognac and pandan coconut fat-washed Bacardi Carta Blanca rum form the base. It is then topped with pandan rose air for a light floral note.
Modern Times showcases the innovative mixtures of today. El Padrino ($25) is a Mexican-inspired cocktail that pays homage to the powerful and influential godfathers of Mexico. This sweet and smoky drink is made with beeswax-aged mezcal, smoked honey, cherry berry mix and burnt citrus juice.
However, the real magic comes in the form of a handwritten prescription for a flavour-changing pill (it’s actually made of miracle berry, a taste-altering fruit that causes sour foods to be perceived as sweet). Let the pill dissolve in your mouth, and experience how the flavours of the cocktails are transformed.
What Do You Want?! ($25) offers a playful twist on the Italian classic Negroni Sbagliato. This build-it-yourself cocktail comes with three test tubes containing butterfly pea-infused rum, sakura vermouth, suze and pear cordial.
Alongside the drinks menu are new tapas offerings to elevate the experience. Indulge in Joselito Paleta Ham ($26) with Spanish crystal bread; Hokkaido Scallop Dumpling ($24) with peanut tofu and Kristal caviar; and Smoked Baby Aubergine ($15), served with red pepper mascarpone, macadamia nuts and Japanese pentas flowers.
