The Lobby Lounge at The Capitol Kempinski Hotel Singapore reinvents Singapore’s iconic dishes in its signature Singapore Heritage Afternoon Tea. Guests are invited to embark on “Chapter 1: East Meets West” presenting a blend of European culinary traditions and Southeast Asian spices and ingredients. Tuck into Chicken Rice with a modern twist – poached chicken breast atop a fragrant rice ball, complemented by garlic chili puree or Hainanese Kurobuta Pork Chop, served in a brioche sando with the classic HP ketchup sauce. Scones are rendered a local touch, with the Pandan Scone served with red bean clotted cream.

The afternoon tea progresses to “Chapter 2: Local Takes Centre Stage” which features Chilli Crab Petit Pain comprising soft buns filled with spicy crab, and Otak Otak Toothfish infused with chili paste and kaffir lime. There’s also Ondeh Ondeh Cake with coconut and gula Melaka, and Bubur Cha Cha Panna Cotta, topped with a light sweet potato foam.

Round off your tea time with “Chapter 3: The Melting Pot”. Creative items include Milo Dinosaur Berliner and Ice Cream Uncle, featuring a cilantro wafer and strawberry dacquoise drizzled with Valrhona chocolate sauce among other delights.
