The Romans knew how to have fun, indulging in everything from chariot races to gladiatorial combats to lavish banquets. Channelling the Roman elites’ love for food and drink is ilLido Group’s new 136-seater dining lounge Baia on the roof of Esplanade Mall. 

The Roman-inspired grandeur is best enjoyed alfresco at sunset, where the 5,000-square-foot space is set against the backdrop of Marina Bay’s glittering cityscape and lush surrounds. But inside is equally impressive and spacious, with murals, Art Deco touches and other decorative elements in rich jewel tones – a subtle nod to Baia’s namesake, the ancient Roman holiday resort city.

While the decor evokes the Roman era, the menu offers a modern interpretation of the Mediterranean. Forget toga-clad waiters serving roasted boar; Baia focuses on fresh, seasonal ingredients with a touch of Italian ingenuity. Indulge in an array of small plates from charcuterie and cheese, gourmet pizzas, or charcoal-grilled specialties. Dishes such as Hokkaido Scallop and Smoked Beef Tartare are recommended to kick-start your meal, while others on the menu like the Wagyu Beef Bavette and Hot Salami Pizza will satisfy despite their unassuming presentations.

But the true centerpiece of Baia might just be the cocktail programme, created in partnership with Proof & Co, the beverage consultancy behind some of Asia’s most celebrated bars. Inspired by Roman conviviality, the bar menu features three categories. Sol offers vibrant and refreshing concoctions like the Strombolian, a bright frothy drink that combines the bold flavours of Campari, blood orange and mandarins; and the Singapolitan, made with Brass Lion Singapore Dry Gin, plum wine, salted strawberry and Prosecco.

The Nox category is named after the Roman goddess of the night, and features a selection of more potent libations. Eclipse is a masterful blend of barrel-aged Ferrand 1840 Cognac and freshly brewed espresso and topped with vanilla choco espuma. The result is not unlike an espresso martini, but sweeter and creamier. 

If you arrive with a large group, consider the shareable, quick-serve drinks in the Mosaics section. The Oasis Punch is a huge punchbowl that blends St. Germain, Prosecco, grapefruit marmalade, butterfly pea, lemon and fresh garden herbs. There are also zero-proof cocktails for those who want alcohol-free options.
