It’s spicy, it’s bold, it’s Peruvian street food. For a taste of the sizzling food served along the lively streets of Peru, head to Canchita’s first Peruvian Street Food Fiesta.
The fiesta is a live showcase of the most iconic Peruvian street food, from ceviche carretilla to anticuchos con pancita, prepared and served red hot off the grill by Canchita founder Daniel and wife Tamara Chavez.
From now till Aug 30, the restaurant will transform to the picanterías (traditional lunchtime restaurants) of Peru where familial communal dining is encouraged. Two long dining tables take centre stage where diners are free to sit and indulge in the best of Peru.
Savour Peruvian signatures like Maiz, Papas & Salsas Andinas ($22), a sharing starter of white corn, crispy potatoes, and Andean corn dished straight from the pot onto the plate in front of you and served with traditional Peruvian tasting sauces of the mild and creamy huancaina sauce, complex ocopa sauce of huacatay (Peruvian black mint), and spicy rocoto sauce for a touch of heat.
Other must-try dishes synonymous with Peru is Ceviche Carretilla ($34), a sharp, tangy and spicy dish of marinated red snapper in Aji Amarillo Tiger’s Milk; and Papa Rellena ($28 per piece), housemade potato croquettes stuffed with traditional beef stew.
Bold smoky flavours can be enjoyed with Anticuchos Con Pancita ($34). Meaty Peruvian-style beef heart skewers are grilled over an open charcoal and further fragranced with pork tripe, baby corn and spicy, tangy anticuchera sauce.
Rounding up the feast is the Arroz Zambito ($14), a Peruvian rice and pudding layered with full-bodied chancaca (a sugary sweet syrup), topped with freshly grated coconut, then finished off with black raisins and cloves.
Canchita is at Dempsey Rd, #9A 9B, Singapore 247698.
