Chinese New Year (CNY) officially begins on Feb 10, 2024, marking the beginning of the Year of the Dragon. While there are all manner of treats to munch on, here’s our choice of toss-worthy prosperity yu shengs and menus that tickle our taste buds.

Si Chuan Dou Hua is the first in Singapore to serve Fugu Yu Sheng ($198), available for dine-in or takeaway at UOB Plaza and Parkroyal on Beach Road. The fugu comes from Shimonoseki, where only specially licensed chefs handle the famed pufferfish.

For dine-in, it offers seven set menus (from $108++ to $388++ per person), fusing traditional flavours with contemporary finesse. Visit UOB Plaza to indulge in two of executive Cantonese chef Hoo Chee Keong’s signature dishes: Waxed Meat Rice with Foie Gras and Salted Egg wrapped in Lotus Leaf, and Double-boiled Hasma with Ginseng and Sea Coconut served in Whole Coconut.

Prosperity Exotic Garden Yusheng, Pan Pacific Orchard, Singapore

The new hotel kicks off CNY at The Chairman’s Lounge, a posh new space for 16 guests. Available for dine-in and takeaway ($188+, eight to 10) is the Prosperity Exotic Garden Yusheng, a delicious ensemble of over 20 fresh vegetables and fruits, layered with whisky-infused sea cucumber, perfectly poached lobster, sliced abalone and unexpected ingredients like pistachio, red lettuce, beetroot, dried strawberries, and crispy brown rice. It is complemented by osmanthus sauce and black truffle sauce, enriched with Japanese matsutake mushrooms.

Harvest Yu Sheng, Peach Blossoms at Parkroyal Collection Marina Bay, Singapore

Peach Blossoms’ Harvest Yu Sheng ($188++ for five/$288++ for 10, dine-in only) invites guests to “smash” a nitrogen-infused rose into a medley of kanpachi, abalone, crispy whitebait, and organic mixed fruits. Available for dine-in and takeaway are Fortune Abalone Yu Sheng ($138++/$188++), Prosperity Salmon Yu Sheng with Crispy Whitebait ($128++/$168++), and Prosperity Salmon Yu Sheng ($108++/$148++). 

Another takeaway is the Blossoming Abalone Treasure Pot ($328 for five/$588 for 10) with ingredients like 10-head Whole Abalone, Sea Cucumber, Scallop, Braised Pig’s Trotter, Roast Duck, Dried Oyster, Prawn, Flower Mushroom, Lotus Root, Dace Fish Ball, and Radish.

Yu Sheng Platters, Hai Tien Lo at Pan Pacific Singapore

Savour an exquisite selection of masterfully prepared set menus by executive chef Ricky Leung and auspicious takeaway treats showcasing the finest of Cantonese cuisine at Hai Tien Lo. Set menus start from $128 per person, from Jan 22 to Feb 25. A la carte specialities, available from Jan 22 to Feb 8, feature delectable dishes such as Braised Imperial Swiflet’s Nest with Lobster and Bamboo Pith ($128 per person), and Barbecued Crispy Whole Suckling Pig ($438 whole).

Prosperity Yu Sheng, Wan Hao Chinese Restaurant at Singapore Marriott Tang Plaza Hotel

Available for dine-in at Wan Hao Chinese Restaurant and takeaway at $288 nett (large), the Prosperity Yu Sheng stars Western Australian rock lobster, sustainably-sourced Irish smoked salmon, yellowfin tuna, caviar, and salmon roe with julienned carrots, cucumbers, radish, pickled ginger, and deep-fried vermicelli, all kissed with gold leaf. Opt for this year’s special Bayberry Yusheng Dressing which impart a tangy and sweet flavour. 

Until Feb 24, Wan Hao also has four six- to eight-course Lunar New Year sets for lunch and dinner with prices starting from $138.80++ per person. The Celebrations of Fortune 8-Course Set ($168.80++ per person for four to 10) includes Double-Boiled Fish Maw Soup with Velvet Mushroom, Wok-Fried Giant Tiger Prawn with Almond Flake in Superior Light Soya Sauce,  Lobster in Spicy X.O. It combines poached Boston lobster tail, sweet torched raw scallops, red dragon fruit, tangy green mango, sweet longan, dried apricot, tomatoes, purple cabbage, cucumber, deep-fried yam strips, pickled onions, walnuts and crunchy Hsin Chu bee hoon, among other ingredients, all dressed with scallion oil and Okinawa acerola juice-infused plum sauce.

At Crystal Jade Golden Palace, set menus are priced between $168++ to $228++ per person (minimum three to dine) and from $988 to $2,888 for six to 10 respectively. Yun Nans is the first overseas outpost of Yun Hai Yao, the largest casual Yunnan restaurant chain in China with over 200 outlets, and specialises in Yunnan ethnic highland cuisines.
