The Coconut Club, one of Singapore’s most well-known nasi lemak restaurants, is celebrating its first anniversary at Beach Road from Jun 6 to Jul 2.

To mark the occasion, the restaurant has released a celebratory first-anniversary menu named the “Signature Lemak Medley” created by local culinary stalwarts: Annette Tan, food writer and founder of Fatfuku; Jeffrey Chia, the chef behind Peranakan private dining experience NonyaBong; and renowned kueh expert and author of The Way of Kueh, Christopher Tan.

Managing partner Daniel Sia explains that through the collaboration with chefs who are renowned for their mastery of local cuisine, they aim to extend their love for nasi lemak by showcasing the deep appreciation for culinary tradition and honouring the roots from which cherished recipes have originated.

Dishes on the menu feature “comforting, unpretentious flavours” that complement well with nasi lemak. These include Chia’s Sambal Hati, a dish that pays homage to his Peranakan roots with tender pieces of chicken heart, liver, gizzard, infused with aromatic spices and a fiery sambal balado sauce.

Annette Tan brings a family favourite to the table with Sabal Prawn Belimbing. A blend of spicy, sweet and sour flavours, the dish feature succulent prawns stir-fried with belimbing and sambal titek. “The use of fresh, quality coconut milk in this dish makes a world of difference,” says Tan.

The Coconut Club’s Sia presents Asam Pedas Skate Wing – skate wing, with lady’s fingers and tomatoes simmered in a flavourful tamarind broth. It holds a special place in his heart as it was one that his late grandmother often made.

End your meal with Kueh Bakar Tapai by Christopher Tan, made the restaurant’s signature cold-pressed coconut milk blend and perfumed with the floral aroma of fermented cassava.

The anniversary menu will be served as a lunch set, and as a la carte dishes and  during lunch and dinner.
