Group executive chef Martin Foo presents this year’s Premium Prosperity Yu Sheng (from $128) with a trio of South African abalone, premium Great Amberjack sashimi and Australian scallops. The new interpretation also features pink grapefruit, bittersweet pomelo, red apple and dried mango strips that pair well with fresh mandarin oranges, dried orange peel and kaffir lime leaf chiffonade. Strips of deep-fried yam, candied walnuts and crisp Hsin Chu bee hoon add crunch and texture. The dressing is made with Shikuwasa citrus from Okinawa, and balanced with traditional plum sauce.
