JiaWei Bai co-founded and established Stay Gold Flamingo (No. 32 of 50 Asia’s Best Bars 2023). Now, he’s making waves in Singapore’s bar and dining scene with his latest venture, the four-storey White Shades along Boon Tat Street, where you can work your way up the levels for an entire night of fun.
White Shades offers a unique cocktail experience that broadens the horizons of cocktail lovers through a variety of spirits, old and new, in different forms, from boozy ice creams to craft concoctions and delicious modern bites.
Having his own space has been Bai’s dream since childhood, and White Shades makes it all possible. When guests walk through the doors, they are welcomed into a vibrant world with four unique experiences, each with its own identity, colour palette and music genre, shares Bai.
Alcohol-laced ice cream
Dessert is a joyful ice cream parlour on the first level. A playlist of pop hits and vibrant furniture add pops of colour against white walls. There are 10 types of ice cream: four alcoholic flavours, four classics, and two seasonal and/or experimental, as well as two sorbets. A juniper-flavoured cone complements them, as do the low-ABV tea cocktails and cold-brewed tea and coffee served.
Boundary-pushing cocktails and eats
Cocktail, on the second level, has dark gradient tones and fabricated stone. Soulful R&B tunes give mellow acoustics from the cushioned walls in this more luxurious setting. All about the service, it offers cosy indoor seating for intimate conversations, outdoor tables for revellers, and waist-high ledges for those who prefer to mingle at the bar.
Boundary-pushing cocktails and fusion dishes are on the menu. Aptly named unRAW, Bai’s cocktail menu reveals White Shades’ fascinating journey. With Codigo Blanco tequila, paprika, lime, firewater and smoked chips, Savi Galloping is inspired by Hermès scarves that decorate the space and dust stirred up both by horses galloping and during construction.
Bomber J, named for the team’s bomber jackets, is crafted with Suntory World Whisky AO, toasted rice syrup, and Hinkoi bitters from persimmons. Several other cocktails on the menu preview Bai’s next five-month menu plans.
Chef Hosni, formerly of Employees Only, presents bold Asian fusion cuisine to accompany the cocktails. The Beef Tartare is topped with a runny quail yolk and spicy sambal matah (a condiment with raw chillies), and Tagliatelle comes with spiced bebek (duck) ragu. The beef cheek Rendang Grilled Cheese with brie and red cheddar is another indulgent treat.
On the next level is Event, a stylish blank canvas that can be transformed into different settings to complement any occasion, whether commercial or private, involving up to 35 people.

A games corner and live soul covers amp up the vibe at the Rooftop, where White Shades takes laid-back cocktail experiences to new heights. Here, the draft beers and cocktails are under $20 to give guests a choice of prices.
