Sushisamba
It’s never a sleepy peaceful Saturday at Sushisamba’s highly acclaimed Copacabana Brunch. Quite the opposite in fact, as diners are treated to a celebration like no other – think endless flows of premium champagne, curated cocktails, and a feast of signature dishes, all served up against the backdrop of live DJs and dynamic performances. You might even be stirred to deliver some impromptu dance moves between bites and sips.
Happening every Saturday (12pm to 3pm) at Capital Tower, the Copacabana Brunch ($250++) features unlimited serves of signature dishes across all categories, from seviche to main courses like Australian Grass Fed Short Rib. Live sushi stations have chefs doling out signature Samba rolls, nigiri and sashimi, while a robata live station offers freshly fired anticuchos. For those with taste for finer things, the brunch offers four free-flow tiers of Champagne. Starting with Boizel Brut Reserve, diners can upgrade their bubbly to Pol Roger Brut Vintage 2015 at $70++ per person, fresh sips of Taittinger Comtes de Champagne Blanc de Blancs 2013 at $345++ per person, or Dom Perignon, Jean-Michel Basquiat Special edition Collection 2015 for the ultimate splurge at $788++ per person.

Cedric Grolet
Award-winning French pastry chef Cedric Grolet has been showcasing his artistry in his festive offerings, including two exquisite Buche de Noel and six winter creations. Exclusively for the season, the patisserie has introduced the Opulent Brunch Set, a dine-in menu that’s available on Dec 24, 25 and 31 from 8.30am to 4.30pm at $190 per person.
The all-day set features soft creamy scrambled eggs on toast, topped with a choice of caviar or truffle. This is accompanied by a tower of six exquisite bite-sized winter creations handcrafted by Cedric Grolet’s master patissiers, and a basket of Grolet’s signature viennoiseries – croissant, pain au chocolat and pain suisse. The set is complemented with two hot drinks and a glass of Taittinger Brut Reserve Champagne.

Wakuda
Wakuda’s new weekend brunch menu showcases the restaurant’s signature offerings in a new light. Guests are treated to a live sushi station led by head sushi chef Daniel Tan, with premium ingredients flown in from Japan, alongside iconic dishes like Wakuda’s Flan and a mix salad with soy honey vinaigrette. The brunch will include a main course and a bespoke dessert crafted by the in-house pastry chef.
There are also two-tiered free-flow beverage buffets where guests can enjoy a curated selection of sake, Asahi beer, and house wines, or add on a little more to include glasses of Champagne Duval Leroy Brut NV and handcrafted international cocktails. Non-alcoholic options will feature refreshing iced teas and freshly squeezed juices with flavours like yuzu and musk melon.
