Dirty Duck

With an open wood-fire grill concept and a chic yet relaxed vibe, Fireplace by Bedrock is a more casual extension of the renowned Bedrock brand. As you enter the restaurant located at the new One Holland Village, you are greeted by an open kitchen allows you to see chef Victor Ng and his team at work.

The 56-seater’s interiors feature rammed earth wall textures – a nod to Bedrock’s philosophy of using natural ingredients – and sports a colour palette inspired by the earthy hue of the Quebracho tree in Argentina. Feel free to bring your furry friends as there is also a pet-friendly alfresco section.

Appetisers, mains, and desserts curated by Ng and his chefs are all prepared on the open wood-fire grill. Must-order starters include Bone Marrow Toast ($26++) with caramelised onions and pickled shallots and Ox Tongue ($26++) served with roasted leek, sesame dip, and ponzu dressing.

Among the vibrant mains, Dirty Duck ($48++) is rubbed with spices such as coriander and cumin powders and Sichuan peppercorn before being sous-vided and grilled. Also, there is Honey Orange Jurassic Quail ($38++), which is larger than most quails and marinated in orange and honey glaze for at least a day before grilling, 6 Hours Wood-Fired Crispy Pork Belly ($35++/$48++), 8 Hours Wood-Fired Roasted Whole Lamb ($38/$50), and Half Suckling Pig ($240++).
