Welcoming a new Executive Chef this month, Hai Tien Lo celebrates Chef Ricky Leung’s appointment to the position with the launch of a refreshed menu alongside an introduction of his own signature creations.

A Hong Kong native, Chef Ricky brings with him a treasure trove of Chinese culinary experience, having spent over 30 years with various prestigious restaurants. Shining a spotlight on traditional Cantonese cuisine, the refreshed menu showcases the essence of Cantonese dishes with premium ingredients put through intricate preparation.

Heading his list of signature creations is the Crispy Chicken Smoked with Royal Tie Guanyin, a theatrical presentation filled with the aroma of lychee wood, which was used to smoke the chicken alongside Royal Tie Guanyin tea leaves.

Give the Fresh Crab Meat and Egg White stuffed in Chicken Wing a try for something you don’t get to taste every day, or have the Traditional Steamed Grouper in Superior Stock if you’re a lover of classic Cantonese offerings.

There’s also their Stewed Eight Treasure Wagyu Beef Cheeks with Spring Onion and Garlic, where they put beef cheeks through a 7-hour sous vide process for that tender bite, then stewed for hours over a traditional claypot for that rich aroma and flavour.

Fans of Hai Tien Lo will also be glad to find that their exquisite dim sum menu now features three new creations as well, including the unique Steamed Fish Dumpling with Queensland Grouper and Fresh Crab Meat. The restaurant’s beloved best-sellers, such as their Double-boiled Chicken Soup with Abalone, Dried Scallops, Fresh King Prawn and Chinese Mushrooms served in Young Coconut, will continue to feature on the menu.
