It’s been a glorious summer at La Dame de Pic, Raffles Singapore.

When world-renowned chef Anne-Sophie Pic made her debut here in 2009, diners were introduced to her cuisine identity, one that is rooted in French technique but celebrates Asian flavours and ingredients. 

This year, the restaurant received first Michelin star, and now welcomes a new chef de cuisine and summer menu.

Chef Alexandre Alves Pereira was Pic’s head chef in May 2021 when she opened La Dame de Pic le 1920 in Megève (and was subsequently awarded one Michelin star). He makes his debut at La Dame de Pic with a new summer menu which was developed closely with Pic in her hometown of Valence.

Diners can choose between the five-course Experience menu ($248++) and seven-course Elegance menu ($348++). Every course features a floral element, either as edible flowers or nuances of finely balanced botanical oils anointing the dish. 

This season, Pic’s signature Les Berlingots pyramid-shaped pasta parcels are filled with earthy French bluefoot mushrooms, Japanese shimeji and white maitake mushrooms, with hints of pepper and hibiscus leaves rolled into the pasta sheets, sitting in a hearty mushroom consommé redolent with ginger and Indonesian vanilla beans.

Les Berlingots

French pigeon breast is served with a green curry parcel enriched with laksa leaves, pistachios, ginger, mint and kaffir lime, while the pigeon’s liver, heart and legs are minced with ginger and kaffir lime to form the filling for a petite matcha-tinged gyoza that reflects Pereira’s love for Chinese dumplings – his official comfort food.

Other menu highlights include crisp kueh pie tee shells encasing pickled and burnt corn kernels, Sakura gelée and silky turmeric mousse. Sweet botan ebi sit on a bed of chawanmushi with local cucumber, marigold leaves and Oscietra caviar, marking the restaurant’s ethos of using only the best ingredients.

Ebi Chawanmushi

Accompanying the menu is a new beverage programme by chef sommelier Justin Wee, including a locally brewed beer made exclusively for the restaurant. The unique Mixed Pairing (from $98++), includes both rare and classic wines and sakes, and non-alcoholic concoctions (think shiso-infused clarified Granny Smith apple juice); while the Wine Pairing (from $188++) features private labels from vineyards in Rhône Valley, where Pic was born.
