Michelin Guide Singapore 2023, which celebrates the achievements of chefs and hospitality professionals in the country, has unveiled its full list of Michelin-starred restaurants and establishments in a grand ceremony held at Parkroyal Collection Marina Bay on Jun 27.
The 2023 edition features a total of 286 locations with over 30 different cuisine types, including Starred, Bib Gourmand, and Selected food establishments.
Five restaurants have been newly awarded with one Michelin star, bringing the total of Michelin-starred restaurants in Singapore to 55. They are Born, Poise, Seroja, Sushi Sakuta and Willow.
There are six two-Michelin-starred restaurants this year (Shisen Hanten dropped one star), while all three three-Michelin-starred restaurants managed to retain their stars.
The Michelin Bib Gourmand, an award given to food establishments that offer an exceptional value-for-money experience, has 19 new additions (two restaurants and 17 hawker stalls) for a total of 79 addresses in Singapore.
Seroja emerged as a big winner. Not only was it newly minted with one Michelin star, it was recognised for its sustainable practices with the Michelin Green Star – a first for Singapore.
Seroja’s chef-owner Kevin Wong also took home the 2023 Michelin Guide Young Chef Award, an accolade that recognises a young chef working in a restaurant of the selection, and whose exceptional talent and great potential have impressed the inspectors.
The restaurant, which opened in 2022, features dishes inspired by the Malay Archipelago, and seafood-focused tasting menus that pay tribute to Malaysian culinary traditions through a generous use of local produce, spices and techniques.
Other special awards include Michelin Sommelier Award which went to Makoto Iwabuchi from Sushi Sakuta; and Michelin Service Award which went to Desmond Wong from two-Michelin-starred Shoukouwa.
