Tribal is conceptualised by homegrown F&B group Ebb & Flow, which is also behind award-winning restaurants like Sommer and Willow.
The restaurant is a modern Asian grill within Mondrian Singapore Duxton, and conceived as a dining extension of online grocer Modern Provision.
Upon entering, diners will find themselves in a rustic enclave ablaze with warmth and ethnic vernacular. Its interiors, designed by award-winning, Indonesian-based architecture firm Andra Matin Studio and Indonesian weaving atelier BYO Living, reflect Tribal’s ethos with its contemporary traditional design and environmental sensitivity.
The 58-seat destination is great for convivial gatherings over bold cocktails, wines, wood-fired sharing plates, hearty rice pots, and a rotation of beef cuts carefully executed by executive chef Keith Wan and team. Expect a melting pot of influences spanning across the Far East with Chinese, Filipino, Indonesian, Japanese and Thai influences, just to name a few.
Enjoy small plates like Yellowtail Umai ($24++) with a Sarawakian dressing of lime, chilli, garlic, and kaffir limes with crumbled chickpeas and preserved tangerines while nursing your first cocktail – try Sugar & Spice, G & Tea or Whiskey Business, all $25++ and concocted by bar manager Jin. Also available are seared Bincho Scallops ($35++) with smoked buttermilk, homemade X.O. sauce, basil oil and pear. A lip-smacking snack for adventurous foodies is the Fried Duck Neck ($21++), seasoned with house spices and served with mint nam pla.
Get your protein fix with the Pure Black Dry Aged OP Rib (market price) with a nutty aroma and intense flavours or the Japanese Satsuma Striploin ($160++), a worthy treat with exquisite melt-in-mouth marbling, thanks to free-roam breeding and feed from Minami Satsuma Valley.
In addition to the meats, the menu’s star is the sharing rice pots in three variations: Wild Mushroom ($58++), Wagyu ($88++) and Seafood ($78++). In all three, fluffy Thai Jasmine rice is mixed with aromatic vegetables and herbs. Served in a cast iron pot, each pot requires 30 minutes of cooking time, with portions that could satisfy up to three people.
End your meal with Bibingka ($16++), a traditional Filipino dish baked on banana leaves until it is charred and cracked and served with kaya Ice cream or Egg Tart ($18++), a new twist on custard between crispy Greek kataifi, complemented by green sunflower seed ice cream for a nutty, icy finish and osmanthus for a soothing scent.
