Momolato founder Sharon Tay sets a new high with High Bar Society’s alcoholic gelatos

High Bar Society is a place where you could actually get drunk on gelato. The new venture by chef Sharon Tay features gelatos with 6% alcohol by volume, and trust us, they can deliver a tipsy kick after a few spoons.

Located along Tanjong Pagar Road, High Bar Society certainly sets an exceptional standard for alcoholic gelatos. Unlike the prevalent industry norm of 1–3% alcohol by volume content, Tay’s painstaking year of research and development has resulted in a product with the highest alcohol content.

Why the obsession with 6%? Tay, who founded the award-winning Momolato gelato brand, says it’s about pushing the boundaries of what ice creams and gelatos could be, and thinking out of the box. It took a while to stabilise the formula and balance the alcoholic flavours – gin, for example, proved to be the most challenging but she managed to find the right citrus ingredients that allowed the gins’ botanical notes to shine. In the end, she is proud of the 18 gelatos that currently appear on the menu (there’s more to come in the ensuing months).

Tay incorporates premium spirits like The Macallan, Glenmorangie, Tanqueray, Bombay Sapphire, Patron, Veuve Clicquot and other premium spirits into her artisanal creations. The outcome is a tantalising medley of flavours that awakens the palate and delivers a new experience for dessert lovers. While the products target a younger demographic eager for fresh ways to savour alcohol, we predict the unique creations will attract all ages.

Standouts among the 18 offerings ($13 to $19) are the Highland Fling (infused with The Macallan), Zest My Zing (Key Lime Pie and Ginger Flower infused with Tanqueray 10), Her Bouquet (lychee sorbet infused with Veuve Clicquot Rosé), Emerald Nutsack (sea salt Sicilian pistachio infused with Glenmorangie Lasanta) and many more.

For the adventurous, try the OMMM…, a white chrysanthemum gelato infused with Jiang Xiao Bai baijiu, or the AA Campaign, an apple strudel gelato with Absinthe JS Blue. Love them or hate them, they will definitely leave an impression.

But don’t just come to High Bar Society for the desserts – the 30-seater cafe/bar also serves tapas and cocktails. The minimalist interior sets the stage for the experience, featuring a concrete moon that imparts a soft lunar glow throughout the room. Bridging the gap between conventional ice cream cafes and upscale bars, it’s the best of both worlds, and we are here for it.
