For Haru Yo Koi ($25), senior bartender Yahan marries Roku Gin with cherry brandy, chocolate, cherry puree, Okinawa brown sugar, cream and lemon juice. Picnic in Spring ($25) features cherry brandy, hojicha, and Campari, while Little Blossom ($25) has lemon verbena cherry cordial and St. Germain.

Senior bartender Amos Kew captures its zesty presence in Roku Gin in Dashi Martini ($25) with Tio Pepe, sencha dashi, orange, and flower water. Sansho Sour ($25) includes Cointreau, sansho syrup, firewater, and Gyokura mist. Sakura Hi ($25) is a thirst-quencher with peach liqueur, yuzu juice, and soda water.
