Huber’s Butchery, a Dempsey stalwart known as a purveyor of gourmet delights and carnivorous treats, has just come out of a revamp after 17 years in the business. The 14,000-square-foot (1,300-square-metre) butchery-and-bistro concept now boasts a modern farmhouse look, complementing a neutral shade of grey with red and white accents.
But the differences are more than just cosmetic. The longstanding family-run butchery offers a slew of amenities and products ranging from the customer-centric to the eco-friendly.
Case in point: Temperature-controlled self-collection lockers outside of the store, accessible 24 hours a day to enable fuss-free physical pickups for online orders at your convenience.
Even if placing an order has slipped your mind – or if you’re simply feeling peckish after opening hours – Huber’s Butchery also sells selected grocery items like charcuterie, daily necessities and beverages (a can of Coca-Cola sells for $1.10 which apparently is the cheapest in the area) at a vending machine next to the self-collection lockers.
In other words, it’ll be easier than ever for discerning gourmands to get their hands on the grocery’s ever-growing selection of fine produce from around the world. Think oils, condiments, housemade sauces, seasonal veggies and over 200 varieties of cheese.
But of course, meat takes centre stage at the butchery, both in the traditional sense and the cutting-edge. On one hand, you’ll find traditional quality meats and exclusive products such as Hirai grain-fed wagyu from Kyoto, Mangalica pork from Hungary, and Australia’s most awarded beef brand Stockyard.
You can order customised sausages, all made on-site with natural casing, void of fillers, MSG and preservatives. The more adventurous can get game meats such as kangaroo, rabbit, frog, venison, jumbo quail, and goose. Bones, offals, sweet bread, foie gras and haggis are available as well.
Then there is cultivated meat. Huber’s Butchery is the first butchery in the world to sell and serve cultivated chicken thanks to its partnership with Good Meat. This fourth version of the cultivated meat company’s product is readily available along with other plant-based offerings, thereby catering to all styles of carnivorous sustainability.
In line with this sustainable ethos, an array of solar panels will soon be installed by end-July 2024, generating enough clean electricity to supply a seventh of the butchery-bistro’s energy needs. For customers, these efforts extend to green conveniences such as charging stations for electric vehicles while shopping or dining, and recycling stations.
Other sustainable practices, like turning food waste to compost and operational initiatives that focus on reducing carbon emissions, underscore Huber’s Butchery’s commitment to a greener world.
Once you’ve ticked off everything on your grocery list, head downstairs to Huber’s Bistro. The new waterfall garden is ideal for outdoor picnics or enjoying the bistro’s takeaways, while an upgraded children’s playground with additions of a mini flying fox zipline and Swiss Alps-themed climbing wall allow the little ones to play. A herb garden complete with name tags for each plant used in the dishes served at the bistro, offer fun educational interactivity for the young and old alike.
