The bars and lounges at Pan Pacific Hotels Group (PPHG) are not resting on their laurels. On World Cocktail Day (May 13), mixologists at each bar took on the task of infusing a “challenge” ingredient into their creations and to use local products whenever possible.
The result of this #ShakeItUp Challenge is a limited-edition menu with cocktails that capture the essence of its hotels, along with the mixologists’ individualised touch. The menu is available from now till Jun 23.
Taking on the challenge head-on with fiery, bold ingredients is Plume’s head mixologist Ong Jun Han at Pan Pacific Singapore. He presents Fiery Feathered, a daring concoction of sesame oil, chilli distillate, and Szechuan peppers, garnished with a cucumber ribbon. Surprisingly, the spices do not overwhelm. The chilli and peppers give a subtle spicy kick while the sesame oil rounds up the flavour.
Over at Florette at Pan Pacific Orchard, Singapore, it is basil that takes centre stage. Inspired by Singapore’s lush gardens, the Basil Match cocktail combines the culinary herb with gin, Laplandia coconut vodka and matcha for a burst of tropical flavours.
Portman’s Bar at Parkroyal Collection Marina Bay, Singapore, offers El Fili Martini, a sweet and sour drink inspired by the Filipino classic stew Sinigang. The drink combines Grey Goose vodka, mezcal, and Tio Pepe Fino Sherry, and is garnished with edible fruit leather. It delivers sweet, tangy flavours with a hint of spice from fresh green chilli oil.
For botanical bliss in a glass, head to Lime Bar at Parkroyal Collection Pickering, Singapore. It has created Pickering Sky Garden featuring Roku Gin, Luxardo liquor, Midori, and gula melaka, garnished with Japanese cucumber and lychee.
At Club 5 at Parkroyal on Beach Road, Singapore, the bar delivers a punch of Singaporean flavour with Spiced Asian Vanilla. The drink pays homage to the lively and colourful atmosphere of Kampong Gelam with a musky flavour enhanced by the spiciness of star anise mist and the creamy richness of clarified milk punch, all culminating with a topping of Singapore’s iconic ingredient, kaya pandan.
