After a multimillion-dollar facelift lasting two long years, Grand Hyatt Singapore has rejoined the nation’s coterie of five-star hotels along bustling Orchard Road. It now boasts a new contemporary look, refreshed suites and most importantly, a host of exciting dining venues both familiar and innovative.

While we are most excited for the Southeast Asian debut of chef Sergio Herman (of three-Michelin-starred Oud Sluis fame), his fine-dining, semi-casual Italian restaurant Le Pristine Singapore will only open its doors later this year in October.

For now, foodies can head back to the well-loved dining options at the hotel. One notable restaurant that’s already begun operations in the days following the hotel’s July 10 reopening is the StraitsKitchen, a true-blue Singaporean joint that’s long carried the torch for inclusive dining in the heart of the city.

As the first buffet restaurant in a five-star hotel along Orchard Road to be awarded halal-certification, it has long attracted a crowd for its gastronomic spread of Chinese, Indian, Malay and Nyonya nosh – now updated under the wing of chef de cuisine Nelson Wong to include seasonal delights like Fish Head Curry, Sustainable Salted Egg Prawns and local desserts. (We strongly suggest trying the Butter Chicken, Satay, Laska and Carrot Cake. The Coconut Ice Cream, when drizzled with gula melaka sauce, is divine.)

Returning once more to give travellers at Grand Hyatt Singapore a taste of la dolce vita is Pete’s Place, a cosy Italian comfort food joint with a legacy stretching back to 1973. It is now headed up by Pugliese chef Salvatore Giorgio Catania who will bring to bear his own culinary traditions within the restaurant’s new private dining room, chef’s table and grand wine cellar.

For those with only the time or bandwidth for a light snack or three, The Shop’s suite of freshly brewed coffee and baked goods has also returned to the hotel, along with its gourmet offerings of sustainably sourced ingredients – think premium seafood and organic vegetables – and exquisite libations. Expect to find exclusive collaborative beverages available only at The Shop, ranging from a Glenlivit 16-Year Single Malt Whisky to a pandan-infused Scotts Lager (crafted together with Brewerkz).

Speaking of libations, these are available now in large-bottle formats at Oasis Bar. The on-site live DJ gives a preview of what’s to come in September when the bar transforms into a fully-fledged convivial restaurant with six diverse culinary experiences and thematic events. 

Those with the patience to hold out until October will be duly rewarded with the return of the newly revamped Martini Bar – a glass-enclosed escape complete with plush sofa seats and high cocktail tables for light after-work refreshment.

In the meantime, have a drink at Brix. The live entertainment destination now has an enhanced beverage menu and bar snacks. The large island bar is also a great spot to catch the band Gravity who plays from Tuesday to Saturday. If you prefer a more relaxed environment, head to the wine and whisky bar at the Quiet Zone.
