The buzzworthy InterContinental Chiang Mai Mae Ping may not be open until the third quarter of 2023 but executive chef Denvers Rattan is already planning to champion local ingredients and flavours at the hotel’s restaurants. Rattan will be using seasonal vegetables, spices and herbs sourced from the hotel’s locale in his Lanna-inspired menus to attract locavores, and benefit local farmers and food producers.

Over at IHG’s premium brand voco Orchard Singapore, executive chef Shannon Batten and his team source for MSC-certified seafood and carbon-neutral beef from a roster of suppliers. In addition, Opus Bar & Grill will promote low- to zero-alcohol cocktails in collaboration with Bangkok’s Ms.Jigger this June.

Speaking of cocktails, combining spirits with sustainable storytelling makes them all the more unique. Stanislav Andruskevic, bar and beverage manager at Kimpton Maa-Lai Bangkok, says the cocktails at Ms.Jigger, a fictional muse, are more than just drinks. Here, they are based on her travels. Just ask the bartender.

While the Negroni evokes memories of Italy and cicheti, the Tales of Thailand cocktails showcase the country’s diverse flavours. Try the Siam Milk Punch, a Thai milk punch cocktail using pandan-infused rice flour droplets in coconut milk and palm sugar, and served with icy Thai milk tea.
