From now until Nov 2, Rang Mahal’s Diwali Culinary Festivities feature exclusive Diwali specials for both lunch and dinner. Celebrate Tiffin Room‘s rich traditions of Diwali with chef de cuisine Kuldeep Negi’s specially curated Diwali Dining Experience showcasing India’s diverse culinary landscape from historical Hyderabad to the coastline of Kerala.
What and when

The Dining Experience starts with an appetiser of Makai Matar Chaat, a Western Indian favourite spiced mix of sweet corn, green peas, onions, tomatoes; traditional Khumani Murgh Kebab from the North, featuring succulent tandoor-grilled chicken leg kebab served with apricot and yoghurt, complemented by an (optional) pairing of a Monkey 47 Gin with Elderflower Tonic for an added floral sweetness.
Non-vegetarian main courses served in the restaurant’s signature tiffin boxes include the Hyderabadi Murgh E Lazeez, featuring stuffed chicken breast in a rich tomato and cashew gravy; Erachi Ularthu, a Keralan classic stir-fry with tender lamb chop complemented by coconut, fennel seed and curry leaves. Kadhai Lobster draws inspiration from Punjab, with lobster curry enriched with bell pepper, coriander and spices; while Moradabadi Fish Biryani sees Chef Negi’s twist on the popular Indian biryani, rendering a hearty rice dish with pomfret fish and saffron and fresh mint.
For vegetarian mains, indulge in a creamy Subz Kaju Coconut Curry comprising a medley of baby corn, snow peas, and carrots in creamy coconut sauce; Kofta Shaam Savera, for paneer wrapped in green ‘balls’ kofta in a silky-smooth tomato gravy. Govind Gatta Curry celebrates Rajasthani cuisine, with chickpea dumplings served in a rich spiced yoghurt curry, best eaten with Kolkata Subz Biryani, an aromatic basmati rice dish with vegetables and saffron. Complement each biryani with a (optional) glass of crisp William Fèvre Chablis 1er Cru 2021.
End the meal on a sweet note with a trio of Akhrot Halwa, a walnut pudding with mixed nuts (paired with 1985 Dalva Port wine); Kaju Strawberry Katli, a popular Southern Indian fudge made from blending creamy cashew candy with sweet strawberries; and Besan Til Burfi, another Diwali favourite of chickpea flour and coconut confection.
Handcrafted artisanal Mithai

Adda’s Diwali Thali ($38++) has been curated to showcase India’s diverse cuisine, available exclusively from Oct 28 till Nov 2 only.
A few highlights on the Non-Vegetarian Thali include Murg Malai Khumb (chicken in a creamy mushroom curry), Poha-crusted Assamese Fish Curry (puffed rice crusted sea bass in an Assamese-inspired curry), and Mysore Mutton Masala (juicy mutton chunks cooked in spicy Mysore masala). For starters, the hearty Gosht Badami Shorba soup kicks off the non-vegetarian menu, comprising lamb stock infused with saffron, garlic and almond, while the vegetarian set starts off with Apple Tulsi Tomato Shorba, a blend of green apple, tomato, and roasted cumin.
