Mish Mash is the latest concept by The Proper Concepts Collective, the group behind Ms. Maria and Mr. Singh, Rappu Handroll Bar and The Feather Blade.
The wine-cocktail gastro-bar, which opened recently on South Bridge Road, wants to shake up the restaurant scene with its bold and creative offerings. Not satisfied with just a wine menu or certain wine styles (such as natural wines), it decided on a novel approach to its drinks programme to “revolutionise the way we think about wine and cocktails through its wine-cocktails”.
So what exactly are these wine-cocktails? A glance at the menu reveals wine’s “alter-egos” where each drink is a homage to core wine varietals such as reds, whites and rosés.
Led by Boo Jing Heng, a Diageo World Class Champion and a former Principal Bartender of Jigger & Pony, the Mish Mash team interprets and creates a flavour profile that is familiar yet captivates the senses.
Thirsty diners can expect a diverse array of wine-inspired selections, from wine-based cocktails such as Cacao Red Wine laced with strawberry dust, to wine-inspired alcohols such as rose tequila, Shiraz gin, and sherry-aged whisky.
There are even so-called vintages akin to traditional wines, but they will be updated quarterly to showcase new releases. As for now, we suggest the Green Goddess (inspired by white wine) and Adam & Eve (inspired by sake). The former is a fruity cocktail made with Botanist gin, white grape and green apple; while the latter is an interesting combination of tomato water, Junmai Daiginjo and Seedlip Garden for a slightly sweet and tart profile.
As a gastrobar, diners can also expect a fully charged food menu, from small to large plates showcasing ingredients from around the world. Indulge in intriguing twists on classic dishes that marry ingredients from all over the world. From the German spaetzle to North Africa’s harissa, diners can expect a global culinary experience served in various formats – small, medium, large – to complement their cocktail and wine bar experience.
Must-tries are the Charred Garden salad with pear, broccolini, pomegranate, plum, strawberry and feta; Kurobuta Pork Chop with caramalised king trumpet, charred pineapples and dirty rice; and New Zealand Lamb Saddle with edamame hummus and coin prata.
