We figured that ramen had its day a couple of years ago, in 2011 (with the opening of cult favorite noodle joint Ippudo and the first branch of Tonkotsu King), but really, the trend never died. It just evolved. Gone are the plain pork-based soups. Noodles today are souped-with funky flavors. Think of it as Ramen 2.0.
