Known for his contemporary meets classic cuisine style, this Michelin-starred chef conjures up a menu inspired by Tuscany’s finest foods. The six-course menu brings together the best of Tuscan ingredients with dishes like red prawns, pistachio sauce and cherry tomatoes; foie gras terrine, chicken jelly, roasted lemon and Sicilian almonds; and a risotto of red beetroot with gorgonzola cheese. The Speri wine-pairing includes lots of Valpolicellas like a 2005 Recioto Della Valpolicella Classico-Roggia, 2009 Amarone Della Valpolicella Classico-Vigneto Monte Sant’Urbano and an easy-drinking 2013 Valpolicella Classico.
