Abhijit Saha attempts just that in this five-course wine-pairing dinner that includes dishes like deconstructed dahi vada, a frozen powder with tamarind chutney, mint chutney and yogurt paired with 2012 Sartori Bianco “Marani”; Pashmina chicken supreme kebab together with 2012 Valpolicella Superiore Ripasso; and gucchi khumb matar biryani with pomegranate raita quenelle paired with a 2008 Sartori Amarone della Valpolicella.
There are also pre-dinner canapes like curd rice arancini and sea bass kebab with clams before settling down.
