Kick things off with dishes such as home-cured salmon with horseradish cucumber emulsion, followed by roasted ribeye with glaze celeriac. Desserts are fanciful, including a Calamansi Chiboust (hazelnut biscuit, strawberry consommé and strawberry compote).
