It’s ironic that this cocktail bar along North Canal Road is called Fancy, because there’s nothing really elaborate about the place, and that’s a good thing. Perhaps they’re referring to the other meaning of the word, which then makes perfect sense, as you’ll likely find yourself easily taking a liking to this minimalist space.
There are no plush leather sofas nor bartenders with attitudes here. Instead, what you’ll find upon entering are clean white walls, white ceilings and a white C-shaped bar counter with just 16 high stool seats. And with affable bartenders Sin Kim Shin (formerly from Jigger & Pony) and Jayden Ong (formerly from Sugarhall) behind the counter, you can be sure there’s no cocktail snobbery to be found here.
Drinks take on the minimalist ethos as well, where silly Instagrammable props find no place and even garnishing is kept to a minimal. The attention then naturally falls onto the liquid itself. The current menu is a flower-inspired one named Pollen, and besides reinterpretations of classics, there are a couple of unique creations in it, all priced at $22.
You’ll also find a decent food menu here for bites to go with your choice of poison, and is substantial enough for dinner too.
