Propeller

The rooftop of Bay Hotel Singapore in Harbourfront is now put to good use with the opening of Propeller, a cocktail bar featuring affordable drinks and bar bites to accompany your evenings lounging on the airy establishment’s many plush seats.

While the Harbourfront area is home to many bay side drinking spots, Propeller is the first one to be perched on a rooftop, offering unobstructed, never-seen-before views of nearby Keppel Harbour and Sentosa, unless you’ve once stayed in Bay Hotel’s bay view rooms.

The drinks menu here has a cocktail and wine focus. Their signature Propeller Bay ($19) is a concoction of vodka, orange juice, raspberry syrup and thyme, then topped with a layer of homemade lime espuma (you can request for it to be torched into lime meringue) for that extra zing. Then have a Date with Hendrix ($14.90), a cocktail made using Hendricks gin (thus the name), crushed dates, fresh lime juice, triple sec syrup and garnished with a date. It should be noted that some of the garnishes used here are actually from their own herb garden downstairs.

There’s a good selection of wines too, housed in their own wine cellar on the rooftop. The house selection alone carries three house red and three house white wines ($11-$12.50) sourced from specially chosen vineyards. Come during happy hours from 5pm-8pm for $8 per glass. That is also the best timing to come as you get to see a panoramic cascade of colors from the sunset. If you’re lucky, you might also get a glimpse of the fireworks that go off everyday thanks to Universal Studios located over yonder.

Then there are the bar bites. Stick to the fries and cheese platters for something dependably satisfying, or get something more unconventional like the Smoked Duck on Crisp Potato Skin ($7.50) or the Brandy Flambe Escargots with Garlic Butter ($13.50). Both are really good. But the food and drinks are really the icing on the cake here. Thanks to the unimpeded surroundings, you often get to enjoy a cool, refreshing breeze rarely found elsewhere in Singapore’s bars.
