The best things we ate this week (Nov 11-17)

Raffles Grill has just introduced some fine new additions to their menu, and they’re a lot more playful than you’d expect. We love the clever hints of Asian ingredients, which add depth and texture to otherwise classic European dishes. The best thing we sampled was the scampi ravioli, which came topped with black truffle and sea shell foam (so you’re tasting earth and sea at the same time). It was delicious and also strangely (at first) comforting, until we later realized it was really a luxe version of shrimp wonton. Also a close runner up: their seared scallops. They came on a bed of cauliflower “risotto” and kombu-parmesan butter, which combined to form a creamy, chunky, peanut buttery sauce.

The drink we’ve been thinking about is a little dessert wine called Oublié from Italian country resort La Casa in Collina. This thick amber ice wine, made with grapes frozen on the vine, delivers a raisiny sweetness that’s much more demure than typical, aggressively sweet dessert wines. The sweet taste is beautifully coupled with a prominent diesel-y flavor and texture, resulting in a complex, unguent nectar that’s hard to forget. It’s not available in Singapore yet, but you’ll be the first to know when that changes.
