Chef Jean-Philippe Patruno of the now-defunct Bomba Paella Bar returns with Una, a brand-new restaurant and tapas bar with a melange of Spanish, French and Italian flavors.
The menu is brief, with just over 20 items, including starters like a hanger steak tartare with egg yolk and watercress (from $28), mains such as ox cheeks with persillade snails (from $33) and, for dessert, a bitter chocolate with salted rosemary soil (what? yes please!).
Also intriguing is the second-floor tapas bar where, in addition to the obligatory artisanal cocktails, spirits and wine, you can sip on your grandmother’s favorite drink, sherry. Sherry producers have made a big push in recent years to make their fortified Spanish wine exciting, and Una is working in partnership with Jerez biggies, Tio Pepe.
