Caring for the climate, the environment, and everything in between isn’t for everyone. What is for everyone, however, is eating—and we can do it while caring for the environment at Sentosa.

Until Jan 2 2022, Ocean Restaurant at Equarius Hotel, Resorts World Sentosa, is offering an underwater High Tea in the Deep Sea ($58++) experience that is matched with delectable sustainably farmed treats. For the unacquainted, sustainable farmed ingredients is when fewer fossil fuels are used, and lesser greenhouse gases are produced during the farming process.

Most importantly, farming is done via human labour instead of chemicals or energy-intensive technology—which conserves water, and protects surrounding natural resources.

On that note, at Ocean Restaurant, diners get to relish five savoury, and six sweet treats amongst giant manta rays and other marine friends.

For the savoury segment, there are the Blue Organic Spirulina, Creamy Avocado with King Crab Meat, and Hiramasa Kingfish Tartare with Coconut Foam Kueh Pie Tee, to name a couple, available for selection. If those aren’t enough, then look forward to the “more exquisite” Canadian Lobster with Seaweed and Citrus Zest Pie. The firm and fresh seafood is one to watch.

The sweet, on the other hand, features desserts like the sweet and salty Sea Salt Caramel Chocolate Mini Tart, as well as the Bordelaise Canelé with Rum and Vanilla. Those who prefer something healthier can satiate their appetite with the Golden Raisin and Pumpkin Seed Scones—which is both fruity and nutty. To end the high tea off a lighter note, patrons can look at Classic Crispy Puff with Chantilly Cream.

To elevate the session even higher, diners can consider a two-hour unlimited beverage package, which costs an additional $48++ per person. With this package, they are entitled to champagnes like the Laurent Perrier Brut NV, the Penley Estate Hyland Shiraz 2018, and the Felton Road Bannockburn Riesling 2020, as well as cocktails, martinis, beers and non-alcoholic beverages of their choice.
