Chef and owner Yong Bing Ngen has crafted a five-course menu ($98) showcasing the crustaceans, such as xiao long bao filled with crabmeat and roe, and Shanghainese mung bean noodles with crab meat. And of course, the classic steamed version with hairy crabs from Lake Taihu, Jiangsu; enjoy with loads of vinegar.
