Exclusively from Sep 29 to Oct 01, InterContinental Singapore will be adding to the list of exciting happenings in tandem with the F1 Singapore Grand Prix, as they bring us a not-to-be-missed 4-hands collaborative dinner between Chef de Cuisine Davide Giacomelli of LUCE and Guest Chef Nelly Robinson of the famed nel. restaurant in Australia.
A first for LUCE, the stunning six-course menu will highlight the unique culinary flair that both Chef Davide and Chef Nelly are individually known for. In a brilliant marriage of Chef Davide’s refined simplicity and Chef Nelly’s fascinating take on degustation, diners can expect to experience a mind-blowing meal they’ll definitely not forget.
From the get-go, the dinner will begin with the Tartare di Wagyu Alla Carbonara, a bite-sized hors d’oeuvre that presents the robust seasonal flavours of Diced Wagyu Beef Tartare, Carbonara Espuma, and Crispy Guanciale, before moving on to Chef Nelly’s Sotto il Mare appetiser with poached spanner crab cooked at 64 degrees for precisely 10 minutes, and Chef Davide’s Farro, Gamberi Imperiali e Pesto Verde, the first main dish of the evening featuring a unique risotto-like dish with King Prawn stock and the Chef’s specialty pesto,.
For the main event, diners will be treated to Chef Nelly’s Spezia Del Mare, a Kingfish Tandoori with smoked yoghurt and lobster, and Chef Davide’s Manzo Maturato, Ostriche, Funghi e Salicornia, where dry-aged Wagyu beef is cooked in a red wine reduction then topped with glasswort and raw mushrooms.
Chef Nelly then brings the meal to a stellar conclusion with the Foresta di Singapore, a peppermint and chocolate dessert inspired by our city’s woodlands and greenery.
