If you’ve been paying attention you’ll already know that JAAN has been looking for a suitable replacement since André Chiang left. Well, it looks like they’ve finally found their man, having recently announced French gentleman Julien Royer as their chef de cuisine.
He’s got big shoes to fill, but Royer has trained under three-Michelin-starred chef Michel Bras. Born into a family of farmers, Royer believes in “artisanal cuisine” using top-grade seasonal produce.
Expect offerings such as hay-roasted pigeon breast and confit of leg with pickled matsutake mushrooms and organic corn ($118).
