Meet the new fine dining restaurant in Rochester

Bringing together the best of Chinese cuisine and French gastronomy, the dreamy Rochester Commons welcomes the establishment of a new fine dining star. Set against a backdrop of lush greenery, HUI is a quaint and cosy retreat within an iconic colonial bungalow.

Taking diners on an experiential journey, the restaurant’s interior boasts a state-of-the-art LED screen stretching from wall to ceiling. The charming bungalow space also offers al fresco dining for diners who’d like to take in the beauty that surrounds the area.

Helmed by Chef Liinson Heng, whose experience includes the three Michelin-starred Joel Robuchon Restaurant, Olivia Cassivelaun Fancourt Singapore, and training under the illustrious Chef Jean Michel Perrchon in Paris, HUI showcases a harmonious marriage of authentic Chinese and French flavours through a series of specially curated set menus.

To ensure the best experience for diners, the dishes at HUI are also refreshed seasonally.

On the current 7-course menu, gourmands can look forward to starting the meal with a luxurious bang, with appetisers such as Blue crab tartare paired with beet, Sze Chuan avocado puree, and topped with Kaluga Queen caviar, and Hokkaido scallop angel hair pasta tossed with house made chilli oil and truffle oil, before moving on to Japanese poached Oysters coupled with Spanish ox heart cabbage and minced chilli beef.

The meal then shifts to the rich textures of French Seabass, where the skin is grilled to a delectable crisp, enhanced with a dash of shishito pepper, then drenched in mala bouillon before serving, followed by the star of the show: the irresistibly tender and juicy Juku Wagyu, accompanied with lightly charred morel and drizzled with Sze Chuan peppery jus.

Finally, end on a high with the delicate Apricot dessert, where Honey Chrysanthemum ice cream is placed atop a base of Madagascan vanilla bean, chantilly cream, opalys crunchy pear, and coffee crumble.
