A Noodle Story opens second outlet at Guoco Tower

While A Noodle Story has come far since its relatively humble beginnings, now you don’t need to go to great distances to join its snaking lines of fervent regulars and patrons.

The 5-time Michelin Bib Gourmand awardee has opened their second store at Guoco Tower, just a stone’s throw away from their primary space at Amoy Street Food Centre and arguably a tad more convenient — and yes, it’s air-conditioned.

Thoughtfully created by fine-dining-trained chefs and founders Gwern Khoo and Ben Tham, the brand’s Singapore-style Ramen is a bowl full of gastronomic perfection crafted for a uniquely Singaporean palate. A lot about the dish was made to appeal to the Singaporean market, and the unbelievably long lines of hopeful diners do anything but suggest the limited number of bowls up for snatch daily. It’s clear the dish, so carefully crafted, receives as much love as it was made with.

Set atop a bowl of springy wanton noodles bursting with flavourful umami are slices of pork belly that are first slow-cooked in a sous vide bath for 36 hours until fork-tender for that melt-in-your-mouth goodness. Beside them are plump Hong Kong-style poached shrimp wantons hand-made from scratch daily, along with a crispy potato-wrapped prawn, battered with strings of premium Idaho potatoes. Finishing touches include the crowd-favourite molten hot spring egg, slices of fresh spring onions, and refreshing shredded red peppers that cut through all that delicious richness.
