Here’s your first look at the newest contemporary Japanese concept from the people behind PS.Cafe

Time and again, we’ve waxed lyrical about PS.Cafe. The homegrown restaurant brand opened its first cafe in 1999, in a cozy corner of a clothing store called Projectshop in Paragon. Some may call it the original hipster cafe, but the combination of a clean aesthetic and addictive truffle fries quickly grew for the brand a legion of fans. Today, there are eight PS.Cafe outlets across the island, as well as Chopsuey Café, the thoughtfully designed haven of East-meets-West cuisines.

And the restaurant certainly hasn’t been resting on their laurels. Following the successful openings of PS.Cafe One Fullerton and PS.Cafe Raffles City in 2017, the brand has announced an all-new dining concept to join its already massive portfolio. JYPSY will be PS.Cafe’s first Japanese concept, created for the young and young-at-heart, and opening Jul 3 at Martin Road.

In keeping with the PS. brand, JYPSY looks to be equal parts design and food. The menu is described as a contemporary yet casual approach to Japanese cuisine, served in a stylized space meant to evoke a coastal theme. Well-lit and expansive, the 65-seater restaurant features a color palette of whites, wood tones, and serene hues of blue; white lanterns and cushions keep the place elegantly cozy.

Nautical interiors at JYPSY

As for food, you can look forward to kitchen offerings spearheaded by Osaka-born Chef Taka, who cut his teeth at both traditional sushi bars and modern Japanese restaurants. Starters include the teriyaki-glazed Pork Belly ($12) and Smoked Mackerel Sushi Roll ($14) with truffle ponzu mayonnaise; sashimi enthusiasts will be pleased to know JYPSY’s sashimi dishes also use premium-grade, Japanese air-flown fish (which really should be the expected standard by now). For to-be signatures, there’s the Bluefin Tuna Sashimi ($24), and a fusion-esque JYPSY Salmon Tacos ($14) made with delectable king salmon. But what we’re most excited for is the Nest of Fries ($11)—an ode to the traditional Kakiage dish of tempura chopped vegetables, and JYPSY’s take on the iconic PS.Cafe iconic truffle fries. How do you say ‘yas’ in Japanese?

No detail goes unspared, much less the drinks programme. Look forward to traditional sakes, Japanese craft beers, plus a proper cocktail menu including fun international concoctions like the Turmeric Pisco Sour ($19).

Starting Jul 3, JYPSY will be open Tuesdays to Sundays, from 11:30am-11pm, at 38 Martin Road; suffice to say it already looks promising. At the rate the PS. brand is going, we can’t wait to see what’s in store for 2019. New year, new store perhaps?
