Singapore’s award-winning leader in Persian dining, Shabestan, launches a new seasonal set lunch celebrating the wondrous beauty of pomegranates.
Widely used in Persian cuisine, pomegranates occupy a very special place in Persian culture. Symbolising abundance, blessings, and many more auspicious connotations, the fruit lends its vibrant colour, unique sweetness, and distinct texture to elevate even the most unassuming Persian dish, presenting that exotic nature many of us love in Persian food.
On the menu are pomegranate-driven Persian signatures like the Fesenjan. Among the most famous of Persian pomegranate creations, the Fesenjan is a rich, creamy stew of finely-ground walnuts, and sweet and sour pomegranate molasses.
With this seasonal menu, Shabestan introduces a new Chicken Fesenjan, giving fans of their acclaimed stew another option to enjoy.
The 3-course lunch opens with a choice of Muhamara – a paste made with walnuts, pomegranate, molasses, toasted bread crumbs, olive oil, roasted bell peppers, and Persian spices – Zeytoon Parvadeh – marinated green olives with walnuts, mountain herbs, Persian spices, and fresh pomegranates with a pomegranate sauce drizzle – or a simple refreshing Pomegranate Salad.
Mains include choices of chicken or duck Fesenjan, a lamb and chicken Kubideh, and the Javaher Polo Chicken – slow-cooked and served with basmati rice mixed with Persian nuts, berries, and sun-dried orange peel.
Then wrap up the indulgent affair with a truly ambrosian Persian Saffron Ice Cream for dessert.
