Chilli Crab

Pretty much understood to be Singapore’s national dish, the Me@OUE version takes it to a whole new level. The Chilli Lobster ($180, serves four) is a concoction by celebrity chef Chen Kentaro, famous for his Japanese-inspired Sichuan dishes. Each order comes with three freshly-prepared lobsters cooked in a signature spicy sauce of Japanese vinegar, ginger, eggs and Japanese leek—and of course, the crustaceans are served with yummy fried mantou.

Sweet and Sour Pork

Another Singaporean favorite, this well-known Cantonese dish is usually cooked with a blend of ketchup and rice vinegar. But the Me@OUE version ($120, serves four) uses tender pieces of premium Japanese Momoiro pink pork, marinated in a sweet and sour sauce and wok-fried over an intense fire. The dish is completed with broccoli, diced bell peppers and pineapple chucks.

Crab Mee Sua

Singaporeans flock to gritty zi char stores specializing in this comforting mix of wok-fried vermicelli and crab. Not ones to mess with perfection, the chefs at Me@OUE jazz up this classic with Sri Lankan crab—a whole, fleshy 1.5kg, along with wheat flour noodles cooked in a thick, fragrant chicken stock and stir-fried with bean sprouts, yellow chives and shallots.  It’s a dish for four and orders start from $198.

Like the sound of it? There’s an entire National Day Menu (from $245 per person) on National Day (Aug 9). Celebrate Singapore’s Golden Jubilee with stylish courses like caviar in Tarama cream, uni chawanmushi, chicken rice (elevated with foie gras and black truffles) and a lemongrass-infused mangosteen vanilla sorbet for dessert.

After dinner, head over to the restaurant’s adjoining rooftop lounge and end your evening with a nightcap, overlooking the panoramic city scape.
