The folks behind raucous cocktail bar Jigger & Pony and next-door grill restaurant Sugarhall have opened up a third restaurant and bar. Located on Bukit Pasoh, the multi-concept space is occupying three floors of a shophouse on 18 Bukit Pasoh Road that was formerly occupied by a Chinese clan.
It’s home to an oyster bar
Humpback is the new 40-seater seafood restaurant that focuses on fresh live oysters from America’s west coast, namely off the coast of Washington, known for its Hama Hama and Kumamoto oysters. In addition to the raw bar, the restaurant will also serve cooked seafood like mussels with pork belly and black cod, as well as wines and white spirit cocktails by Aki Eguchi.
Of course, there’s a cocktail bar
A project by these guys won’t be complete without a dedicated cocktail bar. Gibson will take up the second floor of the shophouse and no doubt become a haven for cocktail fans with a 60-odd list of cocktails inspired by the owners’ worldwide bar crawls. It’s split into categories like “Finding Comfort”—for familiar flavors—and “Sharing Happiness”, dedicated to more theatrical cocktails. The space is slated to open in September
But there’s also room for a “dive bar”
The third (and final) floor will be home to The Flagship, the shophouse’s dedicated dive bar. It will have a huge range of over 100 whiskies, as well as comforting snacks like chicken wings. The run-down space is outfitted in grungy brick walls and concrete floors.
