Some are only available this March

While the clubbing scene is still muted, the bars and lounges are not. They have created imaginative concoctions to whet your appetite for all things new and inspired. Here are some of the most interesting cocktails to try right now.

Ce La Vi, Marina Bay Sands

SkyBar Signatures' Yuzito

Under the creative direction of lead mixologist Andew Hyman comes a new cocktail programme across the rooftop venue. The contemporary, handcrafted cocktails are inspired by the region’s diverse culture and abundance of local ingredients.

SkyBar Signatures features a mix of familiar and more exotic ingredients such as  the fruity and herbaceous Paper Lantern with Don Julio Blanco tequila, physalis, passion fruit and thyme. Those with adventurous palates can try the Yuzito, a yuzu-infused mojito with Tanqueray London Dry Gin, melon, yuzu, mint and bitters.

Meanwhile, Restaurant Signatures pairs its cocktails seamlessly with modern Asian cuisine. One of the highlights is the Border Crossing #2, representing the influence of Nyonya cuisine with Havana 3 Year Old Rum, coconut, cucumber, pineapple sambal and sesame. Sky Lounge Signatures, in contrast, offers easy-going options such as Tropical Savanna with Aperol, coconut, pineapple and hunter’s spirit; and Once in a Life Time with Tanqueray London Dry Gin, ginger, wasabi, nori and soda.

No two cocktails will be alike, with the bartenders at each participating bar prepared to create custom drinks based on the recipient’s preferences, drawing on everything from the guest’s mood to their favourite flavours and ingredients.

Mo Bar, Mandarin Oriental

Mo Bar's New Delhi Soma

Adding a dash of excitement to the bar scene is Mo Bar’s first-ever interactive digital menu. Featuring the bar’s Volume Three menu that was launched in Nov 2020, the one-of-a-kind "cocktail navigator" takes customers on a journey where they explore the history and culture of their chosen destinations across the Asia Pacific.

Choose from a "constellation" of drinks set against a twinkling night sky and listed according to their alcohol content and height of drinking vessel.

Regionally inspired drinks are depicted in vibrant colours and animations, each with a complete description, story and photo of the drinks. From the non-alcoholic New Delhi Soma with yoghurt, chutney and spices to the Jakarta Moka with rum, chocolate and banana, it’s a refreshing way to discover the drinks beyond the traditional paper menu.

Cointreau + World Margarita Day

The Dragon Chamber's Dr. Tang Margarita

Writers Bar, Raffles Hotel Singapore

Writers Bar's Femme Fatale

The storied Writers Bar has reopened, and is now helmed by new head bartender Nicholas Alexander. A tribute to the many famous authors who have stayed at Raffles Hotel Singapore throughout the years, the bar offers artisanal 1915 Raffles Gin cocktails and a special selection of handcrafted cocktails.

The latter is inspired by the colourful characters of The Raffles Affair, a murder mystery novel penned by the latest Writer-in-Residence, Vicki Virtue, a seasoned travel writer and aspiring New Zealander author.

Get to know the glamorous protagonist Victoria West by ordering Agent Provocateur, made with Blandy’s 5 Year Bual Madeira, El Dorado 12, Concord Grenadine, lemon and mint; or be charmed by the beautiful Femme Fatale, a cocktail personifying the glamorous bride, Peyton Latchmor. Other tantalising drinks to “unravel the mystery” include False Alibi and Saboteur. These cocktails will be served alongside new curated Gourmet Collection bar snacks in the sophisticated lobby bar.
