Tippling Club has left Dempsey’s dining enclave and is now at a new spot along Tanjong Pagar Road. It may look completely different compared to its old home (it’s a lot more warm and cozy now), but you’ll still be able to get a taste of chef-owner Ryan Clift’s intriguing molecular cuisine.
The restaurant still has its tasting menus—the classic menu (six courses from $160) and the gourmand menu (12 courses from $265)—but with new additions such as foie gras apple, which features foie gras purée accompanied with apple in several forms (freeze dried, fluid gel, dip, cold confit dice), and roasted walnut ice cream with almond praline powder, yogurt and cassis gel, topped with a powdered form of frozen nitro crumble crafted from buttermilk and blackberries.
For a la carte options, there’s the bar snacks menu with creations like scallop ceviche with celeriac remoulade ($19) on offer. Over at the bar, interesting concoctions by award-winning bartender Zachary de Git are available, including Jolly Green Giant ($18), a mix of gin, Luxardo Maraschino, pea puree, citrus and agave, and the Night Shift at the Potato Factory ($20)—potato vodka, whiskey, roast potato skin and espresso.
