Considering that this restaurant is in the swanky Four Seasons, you’d expect nothing less than top-notch Cantonese cuisine and dim sum here. Well, Jiang Nan Chun certainly doesn’t disappoint, delivering dishes such as the paper-wrapped superior shark’s fin and crabmeat; cod fillet with sautéed egg white; and sautéed Wagyu beef cubes with Japanese green peppers, with class. This is elegant, formal Chinese dining at its best.
