We can’t wax lyrical enough about this simple bistro restaurant—they do French classics in a simple traditional way with good old-fashioned service (we mean staff who actually know what they’re talking about) but without being hoity-toity about it all—and it works. Sebastien’s has a lovely relaxed vibe to it that means it can be perfect for a quick catch up, a lazy brunch or a special night out. And the food is just divine. Just about everything is perfection: Their soufflés (both cheese as well as chocolate and Grand Marnier) are fluffy and hot, their pork and foie gras parmentier is rich without being overwhelming and their rabbit is moist, full of flavor and without a doubt one of the best dishes in town. This is French food at its best—high end ingredients prepared in an uncomplicated, even rustic, way to maximize the most of the flavors. And the delights just keep on coming: We ate every morsel of flesh off our delightful caille farcie (stuffed quail) and were literally sucking the meat off our roasted rack of lamb. Every meal we’ve had at Sebastien’s has been superb, and nothing’s changed yet. BYO.
