Part wine shop, part restaurant and bar, Wine & Chef is Bukit Pasoh’s shining gem by local wine provider SG Wine Cellar in partnership with Italian wine distributor Papawines. This multi-concept establishment specializes in Italian wines curated by wine consultant Fabio Magnani, as well as Mod-Sin dishes created by executive chef Wilson Ang (of DB Bistro, Spruce and Fordham & Grand fame). Expect honest and toned down interiors instead of luxurious embellishments.
Mod-Sin dishes take centerstage at Wine & Chef. Begin with starters like their take on chawanmushi—a combination of tofu and century egg with pok chui crackers and century egg yolk sauce ($6); followed by other intepretations of familiar dishes like Hokkien mee with crab meat ($26) and salmon confit risotto that’s inspired by fish porridge, but done with barley instead of rice ($18). End your meal with Venere Rice Pudding ($8), which is a variation of pulut hitam with pistachio paste and gula melaka.
They take pride in their wine list, which they claim is the largest in Singapore, with over 250 wines from 42 wineries across north and south Italy. Housepours that go by names like Delightful Sparkling, Refreshing White, Elegant Red and Happy Sweet go for $6 a glass. Bottles start from $25, and options include Tenuta Uccellina Rambela Bianca Ravenna IGT Famoso ($32), La Montina Franciacorta ($49) and Cavalier Bartolomeo Barolo Solanotto Altenasso ($59).
